Ingredients: boneless chicken breasts as many as you might need usually 4 large breasts cut in half., cream of chicken soup , shredded cheddar cheese 16 oz package will do.
Directions: wash and clean boneless breast, pat dry, may also use boneless chicken tenders .
Layer chicken, soup and cheese , from bottom to top.

Ingredients: 1 boneless Boston Butt (3-4 pounds) rolled and tied

1 can cranberry sauce (with or without whole berries, your choice)
1 10-12 ounce jar orange or pineapple marmalade
1/4 C soy sauce
1/2 C water
1 tsp ground black pepper
(No need for extra salt, because of the soy sauce)
1 apple (any kind, large, 6-8 oz) quartered
1 Onion (any kind, large, 6-8 oz) quartered
2 carrots, chunked
2-3 stalks celery, chunked
Directions: Browning the roast is nice but not required. You can brown while preparing the sauce.

In the blender, combine cranberry sauce, marmalade, soy sauce, water and buzz it up to combine. Don't try to get the marmalade smooth, just mix it up to make a cooking sauce.

Quarter the onion, apple, carrots and celery and put them on the bottom of your crock-pot. Lay the roast on top and pour in the blended sauce and sprinkle on the pepper.

Cook on low for 3 hours. Turn over and continue cooking for 3 more hours. Check after 2 more hours, because old pots and new ones have different efficiencies. I have never had to go past 5 hours.

I am using a 4 quart crock-pot to keep the roast mostly covered by the sauce while cooking. if your pot is bigger you may have to turn more frequently than half way.

Ingredients: 1 lb lean ground beef (I used 93/7)
1/2 cup chopped onion
1 (1 oz) packet dry Taco Bell taco seasoning mix
1 (1 oz) packet dry Hidden Valley ranch dip mix
1 teaspoon salt, or to taste (optional)
1 (10 oz) can Rotel tomatoes with green chilies, undrained
1 (14.5 oz) can Hunt's stewed tomatoes or Mexican-style stewed tomatoes), undrained
1 (16 oz) can Bush's brand chili beans, undrained
1 (16 oz) can Bush's dark red kidney beans, rinsed and drained
1 (15 oz) can Bush's black beans, rinsed and drained
1 (11 oz) can Green Giant Niblets corn, drained

Water, as needed (I used apx. 1 - 1 1/2 cups)
Beef flavored bouillon granules, to taste (I used 1 tsp per cup of water), or use Beef broth instead of the water and bouillon
Crushed red pepper flakes, to taste (optional)

Sour cream, seeded and diced tomato, shredded cheese, black olives, green onions for garnish (optional)
Directions: 1. Drain and rinse what needs to be, and chop the onion. Set aside.

2. Brown ground beef and onion in a medium skillet over medium-high heat until meat is no longer pink and onion is crisp tender. Drain off any fat. Stir the dry taco seasoning mix into the meat mixture until well incorporated. Stir in the dry ranch mix and salt if using, mixing well. Add crushed red peppers, if using. Pour meat mixture into the bottom of crock pot. Add both cans of tomatoes, all the beans, and the corn on top of the meat.

3. Boil 1 cup of water in the microwave. Dissolve 1 teaspoon bouillon granules in it. (If using beef broth, omit this step).
Add to crock pot, gently stirring to mix everything together. (You may need a little more water as it cooks).

Garnish soup with a big dollop sour cream, shredded cheese, black olives, seeded and diced tomato, green onion, sliced jalapenos if you like. Serve with crushed tortilla chips on top or with cornbread.
